MESSAGE FROM PRESIDENT BRENT

As we bring 2016 (our 25th Anniversary year) to a close, I’m thinking about the hundreds of charities and organizations we’ve partnered with over the years. The numerous volunteers that selflessly gave up their time with one goal in mind,

“The Saskatoon Hub City Optimist Club is serious about "Bringing Out the Best in Kids" and we do our part through community service programs”.

STAND PROUD of all you’ve done as we ARE “Friends of Youth”. WE ARE OPTIMISTS!

 

2016/17: What’s new

As we come into the New Year our thoughts are of the members of HCO and all their hard work and dedication. So we’re introducing a new program just for you. It’s called “Credits for Dues” and it is a credit program where members can earn credits to be used against dues Oct. 1, 2017 to Sep. 30, 2018. For details see the attachment “Credits for Dues”.

 

Also, we now have a very dedicated, hard working Social Committee that has taken the 2nd meeting every month and made it the “Hub City Social”. They have different activities planned each month for everyone to enjoy. Watch your monthly Goods and Goodies for details.

 

Hub City Social:     Members, spouses, friends and family are all welcome to come

We will be playing either Cards For Humanity or Apples To Apples.

It’s pot luck with HCO supplying a meat tray, buns and pickles. We eat around 11 PM.

There is some booze left from the Gala. Plus there is coffee, tea, hot chocolate and water. If you want something else please bring it. Also, bring mix if you need it.

Everyone attending please bring a contribution for the food bank.

 

General Meeting: (now one/month on the second Monday of each month)

Starts at 6:30 PM. We will order dinner first, start the meeting then break to eat when food arrives.

Guest speaker: Dr. Rosenberg from University of Sask. Pediatric (childhood disease research) will talk about the impact of our donation and what they are working on.

 

Hub City Social:     Members, spouses, friends and family are all welcome to come

Brunch at Smitty’s at 12:30 PM: Buffet: adults (9 and older) $9.99/person, up to 8 years age $1/year + $0.99 (all + GST)   

 

Mini Golf at 2:00 PM: $5/ person, youth under 12 is $2/person (no GST on either)

Underground parking is open 9:00 AM to 7:00 PM

No contribution necessary at this social, just come have fun.

 

HCO and our Partners

Watson “ is having a meeting /late Christmas supper January 16th. We are putting together a quad rally for this fall and some smaller projects in between and helping where needed. We have been asked to do the kids program for the spring into Watson (first weekend of June) and the more volunteers we can get for that the better a program we can do Jwe are fundraising for buddy benches for the schools in our area but want an anti-bully program to go with it J

Warman had a successful “Pancakes with Santa” and are running a raffle for remote control model toys. Also, Warman is planning a “Princess Tea”.

Camp Circle O’ Friends theme in 2017 for camp in June is “Prehistoric”.

St. Mark School

“Dear Hub City Optimist Club,

        Thank you for giving our Grade 7 class at St Mark School the opportunity to learn to curl. We spent three afternoons at CN Curling Club learning how to slide, throw rocks and sweep. Our instructors also explained the different parts of the curling sheet and how to keep score. We had a great time learning about Saskatchewan’s official winter sport.

Saskatoon Fire Fighters Children’s Pediatric Fund” received an “in kind” donation from the Gala.

Donations were made to Optimist Park at Diefenbaker Hill, Centennial School high school band and Saskatoon Stallions.

Childhood Disease Research will receive a donation at the general meeting January 9.

Christmas Songs Music Books were made and donated to a singer/entertainer that went go to various convalescent homes in the city making this season a little brighter for the people.

Thank You Cards/Notes

Sutherland School and St. Mark School gave us beautiful cards to show us their appreciation. They will be on display at the general meeting in January.

Camp Tamarac gave us a wonderful thank you note.

SUM Theatre was extremely grateful for partnering with us in 2016. The workshops for the inner-city school kids went very well.

Secret Santa Gift Cards were divided between Sutherland and St. Mark Schools. The schools bought hampers for the families (with kids) making this season a little brighter for them.

Projects and Community Service: Respect for Law (Anti-bullying poster contest) and Santa Parade volunteer tent.

 

There is so much more that isn’t listed. All this is possible because of the dedication and hard work by the members of HCO and our partners.

Merry Christmas

25th Anniversary

What a party! The band (Key Of J.) played light music for the social (6-7) then at the end for the dance.

CONGRATULATIONS KRYSSY B. who was awarded Optimist of the year!

50-50 went to Sylvia W. and 10 door prizes were given away.

 

Santa Parade

Everyone had a blast! From the elves (coordinated by Bonnie W.), to the driver of the CSV (Brent C.), decorator (Jasmine C.) and ALL the people that worked in the volunteer tent (Dave K. and Grandson, Ralph K. and Bonnie W.).

Blades Home Games

The next game we have is Wednesday, December 7 (need 4 volunteers), then it’s the Teddy Bear and Toque Toss on December 17. This is one of their higher attended games. We need 12 people to work that game. Brent will be calling for members, friends and family to sell 50-50 tickets at that game.

 

Flex Tickets are $20 each

A flex pass can be used at ANY game this season (not including play-off games). The great part is there is NO LIMIT to tickets and you save a couple of dollars then if you were just buying a ticket. YES they can be used at the Teddy Bear and Toque Toss on December 17.

This is a great fundraiser for us. Call or e-mail Brent C. for tickets.

Due to the resignation of a director there is an opening for the remainder of the 2016-2017 HCO year.

MESSAGE FROM PRESIDENT BRENT

This year for Secret Santa we gave 20 $100 gift cards to the two schools we’ve partnered with. Sutherland School got 10 and St. Mark School got the other 10. Our hope is to make the Holiday Season a little brighter for the families (with kids) less fortunate.

To all of you, your friends and family Cheryl and I wish you peace and happiness in the Holiday Season. Stay safe.

25th Anniversary Tickets are $35 each

Saturday, November 19th we celebrate our silver anniversary as a club. We will have a 3 course served meal. Call Brent at 306-979-5130 for tickets.

There is a 50-50 and silent auction. These will help to defer costs. As you know fundraising was way down this year, so it`s important that this event break even (or cost very little). We need 10 items for the silent auction and 5 for the door prize draws. Attached is the poster and donation letter. Please help to gather prizes! If everyone can get 1 or 2 prizes we will have enough. Call or e-mail Brent or Cheryl with your prize(s). Also, we have 1 more meeting before the anniversary party. You can bring your prize or get tickets then. We need to give the head count for the meal by the following Wednesday.

Plus, sign up a new member at the party and their dues are paid for the whole year.

 

Blades Home Games Flex Tickets are $20 each

There`s more! If we sell 100 flex passes we get 25% of the 50-50 at the Teddy Bear toss. No kidding! A flex pass is $20 and can be used at any game. We already have people wanting to buy the flex passes. They will definitely go fast so call Brent if you want some. “I found the flex packs to be very convenient. I was able to pick and choose which games to see as my schedule didn’t allow me to attend them all. I could also use the tickets to take my friends to games as well...`

Flex vouchers are not valid for Playoff games and do not carry over to future seasons.

 

Do the Dues $35 For the Year (save $50)

The executive voted to keep dues at $35. I (Brent) have been calling people to remind them that dues are due. Please pay them by the next meeting or call me to make arrangements. Yes you can e-transfer.

Barbecue Beef Sandwiches

    3      Pounds        Beef rump roast
    3      Tablespoons   Flour
   15      Ounces        Tomato sauce
      1/2  Cup           Onions-chopped
      1/3  Cup           Brown sugar -- packed
    2      Tablespoons   Lemon juice
    1      Tablespoon    Beef instant bouillon
    1 1/2  Teaspoons     Chili powder
    1                    garlic clove -- chopped fine
    1      Teaspoon      Dry mustard
                         Hamburger buns
Rub flour into roast. Place in bottom of crockpot and add remaining ingredients, except buns. 
Cook on low for about 14-16 hours. Serve over buns.

A New Year For HCO – Message From President Brent

As we bring in our 26th year we stand proud as Optimists that we have made a difference in the lives of thousands of youth. As the HCO team last year we celebrated 25 years and we brought in two new clubs, Warman and Watson. It takes great planning and team work to make each events and functions successful. I applaud each and every one of you who selflessly donated your time and energy to “Bringing out the best in kids”. BRING ON THE NEW YEAR!

4th Annual Saskatoon Fire Fighters Ladies Gala: “A night to remember”

Saturday, October 15 at TCU Place. Tickets $120 each or a table of 8 for $800. Call Ellen G. 306-955-6669.

Doors open at 4, Graham Dyck 5-6:45, supper at 7 and fashion show at 8. Following is the reverse draw, all remaining prizes are given away and the dance.

Congratulations Niki Afseth winning the early bird prize of a Limo ride to and from the Gala. Ticket was sold by Brent D.

 

Blades Home Games

Here we go our 1st Blades home game that we sell 50-50 tickets is on Thursday, Oct. 6. Game starts at 7:05 pm, we need to be there by 5:30 pm. We need 4-6 people at each one to hold up our end of the agreement. This is one of our best fundraisers. I will be calling you to find out which games you are able to work. Blades home game schedule is found just before the Creed.

Preparation : Mix together in a large bowl. Serve with several pints of blood (cherry punch).
 
Hockey Puck

Many tribes throughout North America played a version of field hockey which involved some type of "puck" or ball, and curved wooden sticks. Ice hockey was first observed by Europeans being played by Mi'kmaq Indians in Nova Scotia in the late 17th century. It was called ricket by the Natives. The game was played utilizing a frozen road apple as the first puck. Eventually, they began to carve pucks from cherrywood, which was the puck of preference until late in the century when rubber imported by Euro-Americans replaced the wood.[1]

A hockey puck is also referred to colloquially as a biscuit. To put the "biscuit" in the "basket" (colloquial for the goal/net) is to score a goal.

Blades Home Games

Just got the word that we are selling 50-50 tickets at ALL the home games except the four that are dedicated to other charities. We need 4-6 people at each one to hold up our end of the agreement. This is one of our best fundraisers. Stay tuned for the full schedule of games we work. Our first game is Sunday, September 25th, Saskatoon Blades vs. Swift Current Broncos. Game starts at 2:00 pm, we need to be there by 12:30 pm.

 

Revised Schedule: The 1st Blades game we sell 50-50 tickets at is THURSDAY, OCTOBER 6th at 7:05 pm (Saskatoon Blades vs. Prince Albert Raiders). We need to be there by 5:30 pm.

Since we only had one food services fundraiser this year our revenue is way down. With only a few fundraising events remaining this year it’s more important than ever for us to make these events as successful as possible. One of our big problems is lack of volunteers. We have a healthy membership and count on each person to participate in the fundraisers. My challenge to each and every one of you is find time in your schedule to come out and participate in the fundraisers. I will be calling you soon to find out what you are working.

Fall Harvest Popcorn
       2 qt Popped popcorn; unsalted
       2 cn Shoestring potatoes
       1 c  Mixed nuts; salted
     1/4 c  Butter or margarine; melted
       1 ts Dill weed
       1 ts Worcestershire sauce
     1/2 ts Lemon pepper seasoning
     1/4 ts Garlic powder
     1/4 ts Onion powder
  
Preheat oven to 325~. Combine popcorn, shoestring potatoes and nuts in large roasting 
pan. Set aside. Combine butter, dill, Worcestershire sauce, lemon pepper seasoning, 
garlic powder and onion powder in small bowl; pour over popcorn mixture, stirring until 
evenly coated.
Bake 8-10 minutes, stirring once. Cool completely; store in airtight containers. MMMMM

GOODS AND GOODIES-OSSF (Our Summer So Far)

I thought I’d take this time to update you on what we’ve done so far this summer.

 

CANADA DAY

It went great! The weather had us nervous and looking up much of the day. In the end the fryers ran all day and we served lots of hamburgers, hot dogs and drinks.

Cheers and applause to all the volunteers that came out, including Sutherland School and Centennial School.

Since we are doing only two fundraising food events this year, we are very happy Canada Day was a success. Next up is Cruise. Soon you will get a call to come out and join the fun.

 

RESPECT FOR LAW POSTER CONTEST

Two schools were involved this year: St. John and St. Mark Schools. Judging the posters was difficult this year as there were some amazing posters. Winning posters are on our web site under the Respect for Law link. Have a look. Ceremonies were held at St. Mark School headed by Jasmine C. and Jessica N. Two police officers attended.

Congratulations to the 2017 Chair and co-chair Jasmine C. and Jessica N. You`ll be great!

 

SUM THEATRE

The workshops have been held. It was great to see members of our club out there. We helped with handing out lunch and saw the play that was put on. This year`s theme is `Little Badger And The Fire Spirit`. Pictures are on our Facebook page along with very kind words from Brittany the coordinator. Check it out.

 

SUTHERLAND SCHOOL BBQs

Two BBQs were held this summer, one for the grade 8 graduates and the other to help them promote literacy in families. They were extremely grateful as we were thanked over and over by teachers, parents and the students. Our members were there and did a fantastic job! To sum this up, a good time was had by all!

 

NEW CLUBS

We now have two clubs signed up and operating under us, Optimist Club of Warman and the Watson Optimist Club. Warman is doing some amazing fundraising and the Watson Club (still very new) is on their way to being a fantastic club. Congratulations to Brent C. and Allyson W. It is not easy getting a new club off the ground, let alone two.

 

WARMAN PARADE

Phil H. took the CSV (Customer Service Vehicle) to Warman and joined the parade. There were people as far as the eye could see with kids and candy everywhere.

 

25th Anniversary of Hub City Optimist Club

Saturday, September 17 we celebrate 25 years (our silver anniversary). We were signed up by Regina Downtowners and are so very grateful. Since then we`ve been busy with numerous activities, community events and fundraisers. Felicia S. is busy making arrangements for a fantastic night. Stay tuned for details.

 

Polytechnic BBQ

Each year (in winter) Polytechnic houses the Purolator truck in their shop. At this time they do repairs and upkeep on our truck, we pay for parts only. To thank them we participated in a BBQ for them.

 

Saskatoon Fire Fighters Ladies Gala

The committee is working hard right through the summer handing out table letters, hanging posters and selling tickets. Their dedication to the Gala will definitely make it “a night to remember”.

 

SCRAPBOOK

Kryssy B. has been going all summer collecting pictures for the scrapbook. Last year her scrapbook took 1st place in its category. She’s also working on a submission to district of some events we do.

 

BINGOS

All summer (actually all year) Bonnie W. coordinates ALL our bingos. Brent C. is responsible for getting the license and (with the executive) manicures the budget which allocates proceeds to numerous (liquor and gaming approved) charities and organizations. The work these two do includes numerous hours of dedication and patience for detail.

 

So that’s some of the things we’ve done this summer. Without the dedication and hard work of our club members and numerous volunteers we wouldn’t be able to “enrich the lives of the youth of Saskatchewan by providing in-kind donations and assistance where needed through local projects and fund raisers”.

Grilled Chicken Appetizer Roll-ups      Yield: 16 Appetizers
  
4    Boneless, skinless chicken Breasts (about 1 lb)
Salt and pepper to taste                                 2 T  Olive or vegetable oil
2 T  Lime juice                                                   1 md Clove garlic, minced
8 oz Port wine or sharp cheddar                   Cold pack cheese food, Softened
8    Flour tortillas                                              1/3 c  Chopped green onions
1/2 c  Sour cream
  
Cut chicken breasts in half lengthwise. Salt and pepper chicken. Combine oil, lime juice and garlic; marinate chicken 30 minutes or
longer. Remove from marinade. Grill or barbecue chicken 10 to 12 minutes, turning once, until chicken is just cooked through (or sauté
in non-stick skillet 10 to 12 minutes). Divide cheese in half; reserve one half.
 
To make each roll-up, spread 1 tablespoon cheese on lower third of tortilla. Lay 1 chicken strip across; sprinkle with a little green onion.
Fold in sides of tortillas; roll up tightly. Wrap in foil (can be made ahead and refrigerated). To serve, warm on grill or barbecue
for 8 to 10 minutes. (Or warm in oven at 350 degrees for 8 to 10 minutes.) Meanwhile, combine reserve softened cheese and sour cream.
Remove roll-ups from foil; cut in half diagonally.
Serve with cheese sauce for dipping or salsa.
 

Strawberry Daiquiri Jello Shots (shots in a strawberry half)

 

1             box (3 oz.) Jell-O™ strawberry                     1             cup water

1/2         cup clear rum                                              1/4         cup Grand Marnier™ (or triple sec or Cointreau™)

1/4         cup freshly squeezed lime juice                   50           large strawberries (approximately 3-4 pounds) Granulated sugar (for rimming)

Mini lime wedges (for garnish)

1 Combine a small package of strawberry gelatin and 1 cup of water. Heat on the stove until the gelatin has dissolved. Stir in 1/2 cup rum, 1/4 cup Grand Marnier™ (or triple sec) and 1/4 cup fresh squeezed lime juice. Set aside.

2 Shave a tiny bit from the bottoms of the strawberries. Be careful that you don't take too much off: just enough to allow them to stand upright. Then, hollow out the strawberries, using a strawberry huller, paring knife or grapefruit spoon.

3 Set strawberries snugly into a pan and fill them with spiked gelatin. Refrigerate and allow to set 3-4 hours.

4 Just before you're ready to serve, rotate the rim of the strawberry in sugar. Garnish with mini lime wedges, if desired, and serve!

Message from president Brent:

This year we are only working two food event fundraisers: Canada Day on July 1 and Cruise in August.

These food events are a major part of our fundraisers. ALL members are needed to come out.

 

Shifts for Canada Day are:

10 am to 5 pm and 5 pm to 11 pm (or as soon as we have everything taken down and put away).

If you are able to come out and work but the shift times are not good for you, call or e-mail me and we will definitely figure out when it is best for you to come out. My goal is for everyone working to come out and have a great time. This includes working a shift that is comfortable for you. Soon I will be calling you to find out what hours you will be working on Canada Day.

Again, this is a major food event and everyone is needed for it to be a success.

 

SASKATOON FIRE FIGHTERS LADIES GALA: Saturday, October 15, 2016 – Cheryl Card and Stephanie Card

By now you’ve seen that the Ladies Autumn Gala has been re-named. Last year we introduced our partnership with the Saskatoon Fire Fighters, and this year we are proudly announcing that partnership by putting the Saskatoon Fire Fighters in the foreground. We are aggressively marketing this year and ask your help. Attached is a copy of the poster, a table letter and a prize donation letter. Please forward these attachments to businesses and/or people that may be interested in attending or sponsoring the Gala. This is turning into a major fundraiser and it will take everyone working together to make this a success. Thank you very much!

Holiday Sun Catchers

Preheat oven to 300° F. Line a cookie sheet with aluminum foil. Spray sides of cookie cutters with
non-stick cooking spray; place on foil-lined cookie sheet. Unwrap and place hard ring-shaped candies 
on the foil, inside the cookie cutters. Fill as much of the cookie cutter as possible, keeping the candies 
in a single layer. Bake until candies are melted, 5 to 7 minutes. Remove from oven and immediately 
cut holes in the top of each Sun Catcher using a drinking straw. If Sun Catchers harden too quickly, 
return them to the oven for 1 minute. (Cookie cutters and candy will be hot) When cool, peel off foil. 
Break off any excess candy around cookie cutter. Carefully loosen cookie cutter from Sun Catcher. 
Thread a ribbon through hole in top to form a loop for hanging.

THE GOODIES

Sweet and Spicy Pork        Preparation time: 10 minutes
Marinade Time: 4 to 6 hours
Cooking time: 15 to 20 minutes
Serves: 6

For the Marinade
235ml lime juice
235ml pineapple juice
235ml chili oil
2½ tbsp ground cumin
2 tbsp fish sauce
1 tbsp hot chili oil
1 tbsp crushed garlic
1 tbsp ginger, finely chopped
1 tsp salt
1 tsp granulated sugar
½ tsp freshly ground black pepper

2 pork tenderloins, about 450g each, trimmed of excess fat and silver skin

Method

  1. In a small bowl combine the marinade ingredients.
  2. Place the tenderloins in a large, re-sealable plastic bag set inside a shallow dish. Pour the marinade over the pork, press the air out of the bag and seal tightly. Refrigerate for 4 to 6 hours, turning the bag occasionally.
  3. Let the tenderloins stand at room temperature for 20 to 30 minutes before grilling. Remove the tenderloins from the bag and discard the marinade. Grill over direct medium heat (350°F to 450°F) until the meat is barely pink in the centre and the internal temperature reaches 150ºF, 15 to 20 minutes, keeping the grill lid closed as much as possible. Remove from the grill and let rest for 3 to 5 minutes before carving crosswise into thick slices. Serve warm.

THE GOODIES

Grill Master Chicken Wings

Wings:                                                         Sauce:

½ cup soy sauce                                           ¼ cup butter

½ cup Italian salad dressing                          1 tsp. soy sauce

3 lb. Chicken wings                                      Hot pepper sauce (1/4 cup or to taste)

Combine 1/2 cup soy sauce, Italian dressing, and chicken wings in a large, zip-top bag. Close bag and refrigerate 4 hours to overnight.

Preheat an outdoor grill for medium heat. In a small saucepan, melt the butter. Stir in the 1 teaspoon soy sauce and the hot pepper sauce. Turn off heat and reserve.

Remove the chicken wings from the marinade and pat dry. Cook the wings on the preheated grill, turning occasionally, until the chicken is well browned and no longer pink, 25 to 30 minutes.

Place grilled wings in a large bowl. Pour butter sauce over wings; toss to mix well.

Brazilian Lemonade

1 lime

½ cup sugar

2 cups water

3 tbsp. Sweetened condensed milk

Wash limes thoroughly. Cut off the ends and slice into eight wedges. Place limes in a blender with the sugar, sweetened condensed milk, water, and ice.

Blend in an electric blender, pulsing 5 times. Strain through a fine mesh strainer to remove rinds.

Serve over ice.

 

Pineapple Angel Food Cake – From the kitchen of Al Pfliger
1 Angel food cake mix
4 - 16 oz. can crushed pineapple
Combine cake mix and can of crushed pineapple (juice to) together in bowl and pour in rectangle pan.
Bake about 30+ min. at 3500 F. Check with toothpick for doneness. Edges will turn golden brown.

Topping suggestions: icing sugar, cream cheese icing or fruit. Serve with ice cream.

Concessions

Soon the CSV (Customer Service Vehicle) and White Lightning (Purolator Truck) will be in action. They will attend numerous fund raisers, events and parades. The coordinator for each will call and request your involvement. It is asked of each member to volunteer for as many of the above as possible. We are very active in summer and it takes EVERYONE to make these successful.

Peanut Butter & Jelly Muffin

     

 Yield: 12 Muffins

 

 MMMMM------------------------DRY MIXTURE-----------------------------

       2 c  Flour, all-purpose

     1/2 c  Sugar, granulated

   2 1/2 t  Baking powder

     1/2 t  Salt

     1/2 c  Peanut butter, chunky

       2 T  Butter

 

 MMMMM-----------------------MOIST MIXTURE----------------------------

       2 lg Eggs

       1 c  Buttermilk

 

 MMMMM--------------------------TOPPING-------------------------------

     1/3 c  Unsalted Toasted Peanuts

     1/4 c  Fruit jelly

 

   Preheat oven to 400F and prepare 12 muffin cups. Sift first 4

   ingredients of dry mixture together. With a pastry blender cut peanut

   butter and butter into dry mixture until mixture resembles coarse

   crumbs. In a medium bowl beat eggs lightly and stir in buttermilk.

   Add egg milk-mixture to coarse crumbs mixture and stir just until

   ingredients are blended. Fill 12 prepared muffin cups 2/3 full. Bake

   20-25 minutes in preheated oven. While muffins are cooking melt the

   jelly and finely chop the peanuts. As soon as muffins are removed

   from the oven brush the tops with melted jelly and dip the tops into

   the chopped peanuts.

  

   HINT:  We suggest using the jelly that is your family’s sandwich

   favorite. These muffins make a great hit at children’s parties.

25 years ago the Regina Downtowners Optimist Club took us under their wing and signed us up a club. Now we proudly announce that WE signed up The Optimist Club of Warman on Sunday, January 25, 2016. They opened with 20 members (they only needed 15). Their goal is to build a swimming pool. In about 5-6 weeks they will have a Charter party (supper) to celebrate. This is one of our more popular annual fundraisers that is traditionally well attended. Tickets go fast. The food is fantastic and the prizes plentiful with a healthy 50-50. Get your tickets early from Dave or at a meeting.

PICKLES: LOVE ‘EM OR LEAVE ‘EM

What can you do with a jar of pickles? Here are some ideas.

Crockpot roast (Brent approved)

Roast, jar of dill pickles, potatoes, carrots, onions, salt and pepper.

Pour a little pickle juice in the bottom of the crock pot. Put roast in the middle and assemble potatoes, carrots and onion around the roast. Pour remaining pickle juice over roast. Salt and pepper roast. Cook as usual.

Brine will soften roast and give a great flavor to everything. Seriously, pickle juice. Try it, it’s really good.

Pickles with no brine

You can love ‘em (keep in jar in fridge) or leave ‘em (toss them). They will keep in the fridge for a few days without drying out. What do you do with them? Here are some ideas:

            Cut some and put them in with the roast. You’ll love ‘em (Cheryl) or leave ‘em (Brent).          

Pickle dish on the supper table (well that was obvious).

            Open the jar and give it to the kids. They’ll have a blast (burping may be involved).

            Egg salad-Felicia approved

                        Make as usual adding in chopped pickle (I saw it on TV.) mmmmmmmmmmmm

                        Cut sandwiches in triangles. Stab a cherry tomato with a toothpick and top each sandwich.

            Fun Food-a favorite among many

                        2-3 very thick slices of ham or smoked back bacon (cut in squares)

                        Cheese cut in cubes (for toothpicks) or slices (for crackers)

                        Pickles cut not to thick (for toothpicks) or thin slices (for crackers)

                        Toothpicks or crackers (with deli or honey mustard for dip or spread)

Pre-assemble on toothpicks or crackers, or put everything out and let the people assemble their own.

Be creative. Add pieces of mushroom, peppers, cherry tomatoes or whatever.

For the bold: multiple different items on short skewer sticks.

Great for sharing, movie night or weekend snack.

BREAKFAST SUSHI: compliments of Jasmine C.

Bacon                          10 pieces                                 Eggs                 2

Tater Tots                   2 cups                                     Toothpicks      3

Cheddar Cheese         1 ½ cups                                  BBQ Sticks       3

Jalapeno Pepper        1 cut small (optional)            Tin Foil

In mixing bowl beat eggs. Add jalapeno peppers and tater tots. Toss gently to coat.

Lay large piece of foil on counter.

Make a bacon weave on foil.

Drive long BBQ sticks on each end to keep bacon from pulling apart.

Spread tater tot mixture over bacon weave evenly, leaving about 2 inches of bacon weave blank.

Spread cheese evenly over top.

With the help of the tin foil wrap breakfast sushi using the 3 toothpicks to hold the bacon roll together preventing bacon from pulling apart while cooking.

Place on baking sheet and remove tin foil.

Cook 45 minutes at 375o or until bacon is fully cooked.

Take out of oven and slice.
